How tortilla chips become real Mexican nachos? In which you can top the crispy triangles of cornflour with cheese and plaster warm with salsa, sour cream and guacamole. The whole thing gets particularly sociable when each of your guests grabs their own pawn, their chips are topped with beef, corn, tomatoes, beans and the like at will and baked under the raclette grill – the perfect Mexican nacho party evening.

For the toppings, drain the corn, kidney-beans and jalapeƱos, put in a sieve and rinse. Quarter tomatoes, core and finely dice.

Cut beef steak into thin slices. Before you put it in the nut-than-eye, fry on the grill plate for a few seconds. If you use beef chop, fry it sharply in the pan and spice it with salt, pepper and cumin.

For the guacamole, core avocados and mash the flesh with a fork. Chop and stir in the coriander. Season with lemon juice, salt and pepper.

4th

For the nachos, fill a handful of tortilla chips along with various toppings into a raclette pile. Sprinkle with cheese and slide under the raclette grill. Briefly baked until the cheese has melted.
